Custom Crush Services

The Wine Foundry offers Custom Crush services to wine grape growers or clients who source their own fruit. For lots of one ton or more, we extend the same artisanal winemaking services we offer to clients who use our own fruit sources. Our services are competitively priced and designed to foster long-term partnerships with grape growers. We are also always looking for high-quality fruit to include in our custom wine programs.


Processing & Fermentation

Processing & Fermentation includes all steps necessary to receive and guide your fruit through primary fermentation. Steps may include any or all of the following: Sort, Crush/Destem, Press, Cold Soak, Saignée, Fermentation, Juice/Must Additions/Adjustments, Punch-downs/Pump-overs, Extended Maceration, and Lab Analyses.

Aging

Aging includes the time, labor and materials required to mature your wine in barrel in our cellar. Activities performed during this time may include any or all of the following: Malolactic Fermentation, Racking, Topping, Stirring, Treatments, Lab Analysis and biannual sample shipments. (Note: New or 1-Use oak barrels can be customer supplied or leased through The Wine Foundry.)

Finishing & Packaging

Finishing & Packaging are the final requisite steps to stabilize and package your wine to your exact specification. These steps may include any or all of the following: Fining, Filtration, Cold Stabilization, Lab Analysis, Blending, Bottling, Label Design, Packing Dry Goods (~60 cases/ton).
